In the early morning, during a low winter tide in February, Dick Hess a retired state biologist from Maryland, searches under exposed rocks in Charlotte Harbor for tiny mud crabs. Mud crabs are a diet staple for local gamefish such as sheepshead and redfish and so mud crabs are a coveted bait for use by local fishermen.
